Avling Brewery (Toronto, ON)

Inspired by traditional bières blanche, Levantine is brewed with heritage wheat and aged on sumac foraged from Northern Ontario. It is a beer that owes its character to ancient crops harvested by modern hands. Pale crimson with an electric acidity, it bursts from the glass with powerful citrus and strawberry tones backed by a delicate earthy funk and ruby red grapefruit. It tastes like a twist of lemon over a fresh bowl of berries, sweet and tart with a fine tannic finish reminiscent of raspberry seeds. After many months of maturation and bottle conditioning with our house culture, Levantine has taken traditions separated by centuries and tied them into an elegant knot.
