Burdock Brewery (Toronto, ON)

A beverage made in the spirit of Piquette. Premium deoxygenated Toronto tap water rested onto a 60/40 blend of Pinot Gamay skins, 5 ½ tonne bins total for 14 days. These grapes were used to make Roselana. Burdock aged a blend of barrel-aged beers on them for 16 days before transferring that liquid to a new tote and adding the water. The bubbly little final product will remind you of a tart rosé spritzer.
