Wild foraged apples and local backyard crab apples under went Carbonic Maceration; . The Apples fermented on their native yeast and bacteria cultures for 3 weeks before a Saison base was brewed onto them. A small amount of Brut Ale yeast was pitched to encourage fermentation. After primary fermentation Brettanomyces Bruxellensis was introduced. The apples conditioned in the beer for 5 months before being transferred off the apples for further conditioning. Total Production time 1 Year. Aromas of red apple and baking spice, rain on leaves. notes of dark plum, hint of molasses, overripe pineapple, light cinnamon, and vanilla.
