Paradise Grapevine (Toronto, ON)

Made from Rotburger, Gamay, Cabernet Franc & Marsanne. Rotburger and Gamay add plush red berry components to this wine and although firmly in the light-red-district this chillable wine carries weight driven by the cabernet franc, and a fleshiness accentuated by the marsanne. It is an all-rounder being perfect for patio season and also just as delightful at cellar temp in the dining room in winter. 1-3 week macerations in open and closed top stainless steel. Light cap management and light pressing, aged out in neutral oak for 5 months. Naturally fermented, unfined, unfiltered.
