Rosewood Estates Winery (Beamsville, ON)

100% Gamay Noir. Fermented using non-selected indigenous yeast: 60% Fermented whole-cluster in French oak vats + 40% destemmed in stainless steel. Matured in neutral French oak barriques for 15-months. Bottled without fining or filtration. A big and rich red wine with notes of stewed plum, cherry, cranberry, and pomegranate. The smallest bit of earth and leather are accented by some tannic structure.
