Third Moon Brewing (Milton, ON)

Third Moon have been working on a vision for their barrel program to include blends of different base beers and barrel treatments to try and pull as much complexity from the oak as they can. This series of beers will showcase different blends of base beer, barrel types and conditioning time in the barrel. Blend 1 is a 13% ABV blend of Heaven Hill barrel aged imperial stout and Buffalo Trace barrel aged English Barleywine. Each of these beers spent 14 months in barrel before being blended together. Third Moon chose a particularly impressive barrel of stout that displayed a lot of deep chocolate and vanilla notes as well as a barleywine barrel that had a big toffee and caramel base. The blend gives huge waves of bourbon along with dark chocolate, brown sugar, toffee, toasted oak and molasses.
