Revel Cider (Guelph, ON)

Plums and petals are two of our favourite things. Like all our ingredients, both are fleeting: transient yet punctual in their annual rhythms. Ostara Lilac takes 3 years to make. We started with apples from 2021, added golden plums from 2022 and finally, foraged lilac from the spring of 2023 before bottling.The blend presents itself with a punchy lilac nose, crisp plum acidity and soft stemmy tannins. Lilacs are the star here, their aroma and texture bolstered by the refreshing plum backbone.
