Third Moon Brewing (Milton, ON) X Rorschach Brewing Co (Toronto, ON)

This is a blend of imperial stouts aged for 15 months in Basil Hayden Toast bourbon barrels and Laird's apple brandy barrels that was conditioned on maple syrup, caramel and a blend of Vietnamese Saigon and Sri Lankan Ceylon cinnamons. While tasting through barrels with the fine folks at Rorschach, the two breweries loved the expressions from Bestowed in both apple brandy and Basil Hayden Toast barrels, but found that a blend brought the most complexity. For adjuncts, the two breweries wanted to lean into the "toast" and "apple" from the barrel types and went for a caramel apple French toast vibe with caramel, maple and cinnamon. It's a complex beer with balanced cinnamon notes, a kiss of sweetness from the maple and caramel along with a rich barrel character.
